If it isn’t clear yet, we’re slightly into breakfast. This past weekend we hit up a place that’s known for skillet breakfasts. The portions are large (just check out my flapjack stack) so we decided Ry would order their Denver skillet and I the blueberry pancakes and then we’d split half with each other. Um… so much for THAT plan. I got ONE bite of his! Selfishness, I tell you. If Husby hoards, you better believe its good. Thankfully I got one more bit by promising him I’d try to replicate it at home. The very next morning, that’s exactly what I did. I’m starting to notice a trend. Just call me, hamburglar breakfast-burglar…
According to Husby, the reason it’s so yummy is because the potatoes remind him of twice-baked gone breakfast style. Oh and he also said, I made him look like a food-snob earlier. Well? Maybe that’s reason to share more, my love (wink wink).

Oh I’m no professional; but thank you. I have a nikon d5000 with a 35mm lens. I edit very minimally using photoshop elements for mac.
Made it for my man this morning for breakfast- delicious! Made a couple substitutions: turkey bacon for ham, and spinach for peppers. Love how you could easily adapt this recipe to what you have in the fridge!

Ooh that looks soooo good – and so easy for me to make veggie by just missing out the ham! I love egg ideas for breakfast, such a great protein source and it keeps me full for so long! I do think when you make breakfast a special meal you eat better the rest of the day – always a bonus!
