Chicken Tortilla Soup

The last few days have been teeth rattling cold. The instant quick fix? Chicken tortilla soup. I’m smitten. And you’ll be too. And for that matter anyone and everyone else who eats it with you. Mmm! In case that wasn’t the convincing description you were looking for…

The smokey flavors, kick from the lime, and the wow factor of the fresh ingredients are what set this soup apart! Plus it takes less than a half hour to make if you’re in a time crunch. See? I told you you’d be smitten.

BUT… and I mean it… DON’T ELIMINATE INGREDIENTS!!! (That’s me threatening without yelling in your pretty face.) You HAVE to get the fresh avocado, lime, and cilantro. Not joking, for reals.

    Yes please, and thank you. This looks a.maz.ing. I love a good bowl of tortilla soup, and when I’ve made it in the past, I absolutely agree, nothing can be substituted for fresh lime, cilantro, and avocado!

    During the winter months I tend to lean on soup and chili recipes for dinner! Just yesterday I said I needed to find a new recipe. Filing this one away! 🙂

    I made your soup tonight and I loved it! I didn’t skimp on the lime, avocado, or cilantro! I did, however, added a red bell pepper to the mix and really enjoyed it. Thank you for your recipe!

    Made this soup tonight and it was delicious! Husband (who is soup-picky) loved it! I added 2 cans of Rotel in place of the tomatoes and green chilies.

    Just made this soup this afternoon…AMAZING!!! I used a can of chili beans in a zesty tomato sauce + a can of black beans. Such a quick & easy pot of soup on this tremendous snow day we’re having! I know my hubby will love it for dinner tonight and am not worried about the kids liking it, more for mommy! 🙂

    OK, I am making this at this moment. It’s very good, but for the life of me I am not seeing “Lime” in the recipe portion of the recipe? Only in your post recipe commentary and sweet threats! LOL. So I will work this to taste, but I would be curious to know the amount you prefer. So far so good! I am a by the taste cook, but for the most part have left this alone. I did add a Serrano pepper and I took about 2 cups of the soup before the chicken and put it in my Vitamix to thicken the broth/texture just a tad, it worked great.

    I just made this for dinner and it is amazing!!! I have looked and looked for a tortilla soup recipe that tastes just like this. You nailed it. AMAZING. Now… How do I stop eating it?! 😉 yummy!!!

    I’ve made this recipe mulitple times because we love it! Yet EVERY time I add the chicken when i read “add all other ingredients” then i read on after doing so and think “Darn! Why didn’t I remember that?” 🙂
