Probably would’ve been wise to post this later on in the day. Green chile first thing in the morning could induce a gag reflex. If this was the case for you, my sincere apologies. Actually, Husby is interjecting and saying apologies are all his. You see, this smothered mess of a burrito is one of his favorites.
It came about after trying to duplicate one of our favorite restaurant’s dishes. Every time we go back home, we have to hit up The Rio Grande, for their green chile chicken burritos.
After a few trial runs in my test kitchen, I’ve gotten pretty close to replicating the taste. So in honor of your upcoming Cinco de Mayo fiesta, we can both guarantee it to be a real party in your mouth.
Disclaimer: it does pack a punch of heat. if you’re sensitive to spice, go easy on the jalapeños.

Rio Grande is my fave!!! Hubby and I used to go every weekend 😉 Those margaritas!!! I so miss living in Colorado, where you could find a killer version of green chile at virtually every restaurant. This photo is making my mouth water. Definitely trying this one 🙂
