Quinoa Pumpkin Pancakes Recipe
 

Pancakes. Flapjacks. Hotcakes. Any way you flip ’em, these guys are… hmmm, how to say this with enough gusto to make it legit…

SOOO crazy-good-you’ll-wish-you’d-never-tasted-them-because-you’ll-want-them-every-saturday-morning-and-probably-sunday-mornings-too. Phew. That was long winded. But totally necessary.

The point? This recipe deserves to be on your fall bucket list. Unless, you loathe pumpkin, and then you’re exempt. And my sincerest apologies for a giant mound of nausea staring at you in the face.

Have to thank my Mother for first introducing me. She managed to whip these up just minutes before we had to hit the road. (She’s kinda sweet and multitalented like that. Like, Mother Theresa meets Martha Stewart, if you will).

      You probably could but would probably need to add more flour to compensate for the density of the quinoa flour. There are quite a few probably’s here… If you give it a go, let me know if they turn out 😉

      I just made these with white whole wheat flour-added an extra 1/8 c., they turned out perfect and very good. Thank you!

    This looks yummy and I do have a ridiculous passion for pancakes mixed with goodness 🙂 I usually skip the butter and the syrup because I had fruits instead! Looking forward to trying this!! Thanks for the post

    My brother and his cute wife are coming into town weekend. We were gonna take them to the Bear Claw in St. George for their super tastey Belgian waffles,,, but I saw these and I was like “Hold the phone!” I think ill whip up a batch of these instead. Thanks for the recipe. Yum! I can’t wait!!

    Yum! I love to make sweet potato pancakes, but never tried quinoa flour. One question – where does one find pumpkin puree? Can you find it canned? Thanks!

      You can find pure pumpkin in the baking aisle, usually right next to the pumpkin pie filling, which is NOT what you’re looking for. 🙂

    I just don’t understand pumpkin haters! Thank you for a great recipe – I have an overload of canned pumpkin at my house that needs using! And I love that these have quinoa in them – pancakes with staying power – I like it!
