A Simple Frittata

April 10, 2014

The egg garden (I needed the empty shells, remember?) is to blame for our newfound love for frittatas. Mix-up any combination of ingredients and it’s sure to become a regular on your menu.  Fluffy rich eggs, baked in the oven — simple, delicious, and a sure way to disguise veggies into the little ones diets. My boys will inhale it, anytime of day. You’re right, we are ‘those people’ — the kind that enjoy eating breakfast around the clock!

So impressive that your boys will eat such colorful things! I have to hide spinach well or my Beckett says “why does it have grass?” 😉

My daughters and I made this for Monday’s breakfast with similar ingredients on hand. Reheated leftovers this morning were just as satisfying. Thanks for the inspiration!
