Cafe Rio Shredded Chicken Tacos
Ironically our family eats them so often that ‘taco’ was picked up as one of Beck’s first words. See, what I mean? Taco ’bout big fans. One of our favorite taco joints is a west-coast chain called, Cafe Rio. When we had THIS picnic, my goal was to replicate their shredded chicken tacos (seeing as shipping a to-go order overnight wasn’t an option) — homemade tortillas and tomatillo ranch, made them a close second to the real deal! We added a few extra toppings: fresh salsa, queso fresco, shredded romaine lettuce, and a squirt of fresh lime!
The best part? It’s a crock-pot meal that can cook while you’re away or playing outdoors!

At 3 hours, remove the bay leaves but let the chicken continue cooking for another 3-5 hours on low.
