Chicken Salad Spring Rolls

I’ve been at it again – making a knock-off recipe I can’t live without! It’s sad when I call in a take-out order & they answer saying, “Thanks for calling Pei Wei. Missy, will you be having the GF Vietnamese Chicken Salad Rolls or the GF Pei Wei Spicy Salad tonight?” I laugh every time! Thankfully over the phone they can’t see my face blush, fluorescent PINK! I kinda have a feeling I’m a real live version of Sandra Bullock’s character in Two Weeks Notice. You know the pathetic take-out order scene? Yeah. Enough said. So, in efforts to be less pathetic & to save my pretty pennies – I took my best kungfu attempt at mastering it! Take it from Mr. Breadwinner {our family’s food connoisseur} … “Winner winner chinese chicken salad spring roll dinner!” Take a roll at it, why dontcha!

    LOVE these! Make them ALL the time! They are one of my favorite “clean foods”. So fresh and tasty!

      What do you put in yours? Do you use a dipping sauce? Totally agree about freshness. It’s better than having a salad, in my opinion! Bursts of flavor all neatly bundled up! Nom nom nom!

    I’ve tried everything from pulled pork to ramen noodles. I love how versatile they are. I mostly use persian cucumbers, shrimp, cabbage, mandarin oranges, and shredded carrots. My favorite sauce is from Trader Joes – they’re General Tso sauce is pretty much the best condiment to anything!

    I found your blog cause Ashley Tingey is my Hubby’s cousin. P.s. I LOVE IT 🙂 This recipe saved my lil bum bum a pocket full. I’m gluten free and dairy free as of a year ago, YIKES! I’ve always told myself I needed to make my own spring rolls cuz they’re a ritual in my diet! ThAnks for the step by step guide! Yummers! xo

      Shut it! Seriously? So glad you LOVED them as much as I do. I totally feel ya on the whole gluten/dairy free regimen. I’ve been off both for almost a year. LMK if you ever want a specific recipe catered to those restrictions. Beyond thrilled you found Pink Pistachio! xo

    Quick question… could these be made ahead of time and left in the fridge for a few hours? Thinking I could assemble them at nap time and then have them for a little date night in after the kiddos are in bed!

      Definitely. That’s what I did when I made these guys. You can have lil’ munchkins roaming around while you’re trying to make these. They need some concentration. Haha! Also, wouldn’t recommend leaving them in the fridge overnight… the rice paper turns stale (not that I know from experience or anything). I kinda went spring roll wrapping-happy!

    New family favorite. Thank you soo much for posting it, my husband LOVED them and it’s wonderful to have such a healthy meal for the rotation. The sauce is fabulous, we used light brown sugar instead of white, fresh grated ginger, and just a touch of rice vinegar….AMAZING!

    Missy THANK YOU so much for posting this recipe!! I should have searched for this before I tried my hand at doing it from memory. 🙂 Ours turned out pretty sticky though – did yours? How did you store your leftovers? I’m going to try wax paper.

      Not overly sticky, no. I stored them in a pyrex dish layered with parchment paper between each layer.
