I debated whether or not to share this one — because, well… you know, it’s toast. How exciting can toast be? Ha! But seeing as we’ve enjoyed eating it at least twice a week for the past month; I figured it earned its place as a keeper. It came about in attempts to recreate a sandwich we ate in Malibu. And by golly, it’s gosh darn delicious. A word of advice should you try it: don’t skip the balsamic vinegar and homemade pesto (it’s definitely worth the extra effort). With tomatoes being ripe for the picking, summer can be savored just a little bit longer. Buon appetito!

This looks delicious! You mentioned a sandwich from Malibu… Would it happen to be from the Malibu Kitchen?! That’s our absolute favorite sandwich shop in the bu and they have the BEST caprese sandwich!!
