Carrot cake is one of those exceptions to the rule – where more is more… a hodgepodge of ingredients turns into something well rounded and delicious. If only a messy pantry closet fell into the same category – haphazardly balanced!
Of course this cake also has its battles. There’s the debate between using apple sauce vs. crushed pineapple to achieve the moisture carrot cake is known for. In my opinion, pineapple definitely takes the win. The added zing balances out the sweet while doubling as a fresh garnish to decorate with.

I would love to make this for Vada’s 1st Birthday cake! Do you have any advice on if I should worry about allergies to the nuts in the recipe???
Just eliminate the nuts, if you’re worried. 🙂
