Unlike dinner, I rarely plan ahead for lunch. Having this simple salad as an instant go-to makes lunch a no brainer. Don’t judge it on its simplicity… it’s by far one of our favorite fresh dishes! On Sunday, I prep all the veggies, pull the chicken, and store it in glass containers in the fridge. It’s perfect for packing to work, serving as a side to a main dish, or even eating as a late afternoon snack!

sorry but this is not greek salad! the traditional greek salad is: tomatoes, cucumber, olives, the white cheese ‘feta’, onion, salt, pepper and very olive oil. the chicken salad is: chicken, tomatoes, lettuce, white cheese ‘feta’, juice of lemon, vinegar of apple, salt, pepper, very olive oil. We don’t use avocado to our salads…
