Chocolate & Pumpkin Ice-Cream Sandwich Recipe
My biggest ‘I NEED a treat’ moments seem to happen as soon as I crawl into bed at night. Odd, I know. Although, I rarely make the splurge a reality — instead my mind races with delicious combinations of all sorts of goodies.
The idea was rich chewy cookies that tasted more like my favorite cake, than a traditional chocolate cookie — sandwiching my favorite pumpkin ice-cream (anyone else a fan of Trader Joe’s?).
Melted chocolate as the base with salty crunchy pecans made this late-night crave a good morning splurge.

- *TIP: unlike other ice-cream sandwiches, these cookies need to be room temp and assembled right before serving. Storing the entire ice-cream sandwich in the freezer changes the texture of the cookies… no good, friends.
