Father’s Day: the day we spoil the men who mean the most to us. I could get all sappy about Husby and my own Dad; but instead I’ll let the food do the talking. And let’s be honest, food is one of their favorite ways to be spoiled! This year, Ry requested an ice-cream cake. Typically that means oreo. But lately he’s been on a pb cup and banana ice-cream kick. So, it seemed fitting to put his ‘craving’ into cake form. WHOA, you guys. WHOOOA-UH (yes, the over exaggerated ‘uh’ is definitely warranted, here). The texture is amazing — not too thick, not too soft, just right (goldilocks would totally agree with me). The simplicity of the chocolate wafer crust, the layer of fresh banana puree, and the combination of textures (i.e. fresh bananas and crunchy peanuts) make this treat something extra special. It packs the wow factor while being incredibly simple to throw together! You’re welcome. And Happy Father’s Day to your guys!
