Summer Scones

A big bowl of yogurt topped with fresh fruit is our typical summer breakfast. But for THIS hike; we needed something a little extra special. Confession: it was my first attempt at baking scones; and I must say (without tooting my own horn …roota-toot-toot!) WHOA buddy, have MERCY! Must be beginner’s luck because I had no idea what I was doing. You know how some scones verge on the edge of a biscotti cookie; while others are more like biscuits? Well, these are insanely soft with the right amount of structure to blanket the raspberries. Add a drizzle of lemon pucker glaze and you’ll be making these once a week.

    YUM!!! I love making scones. Ina Garten’s cranberry orange scones are SO good, plus she gives EXCELLENT directions on how to make them. I agree, the key is not to make them into hard hockey pucks. Can’t wait to try this recipe. 🙂
